Priprema

  1. Pripremite vodu goveđom kockom prokuvajte je a zatim držite na tihoj vatri.
  2. Povrće očistite. Crni luk sitno iseckajte krompir isecite na kocke šargarepu na kolutove a peršun i celer narendajte na krupnoj rendi.
  3. U velikom loncu zagrejte biljno ulje stavite iseckani crni luk i propržite ga dok ne postane staklast.
  4. Dodajte rendani peršun i celer pržite oko 3 minuta zatim dodajte iseckane krompire i šargarepu. Povrće pržite još oko 5 minuta povremeno mešajući.
  5. Povrće prelijte polovinom bujona i kuvajte na tihoj vatri poklopljeno oko 15 minuta dok povrće ne omekša.
  6. Kiseli kupus iscedite (ako je previše kiseo isperite ga pod hladnom vodom u cediljci) sitno iseckajte stavite u zaseban lonac i prelijte preostalim bujonom.
  7. Kupus kuvajte oko 10 minuta u otkrivenom loncu na većoj vatri zatim smanjite vatru i kuvajte poklopljeno dok ne omekša oko 40 minuta. Ako je tečnosti u loncu premalo dolijte vodu (do visine kupusa).
  8. Sve zajedno prelijte u lonac sa povrćem i kuvajte zajedno još oko 5 minuta.
  9. Supu začinite solju C mlevenim crnim biberom po ukusu dodajte slatku mlevenu papriku i C origano. Na kraju kuvanja proverite da li je supa previše kisela. Ako je potrebno možete dodati malo meda ili šećera.
